Caleb Ganzer, of Eleven Madison Park, shows us how to use Port tongs to open a bottle of wine. Port tongs were originally used specifically to open Porto, or Port, (as the name implies) by bypassing the cork entirely. Often times the bottle of Port was so old the cork would crumble if one tried to use a corkscrew to remove it, making a big mess. Using red-hot iron tongs that grip the neck of the bottle and ice water applied with a badger hair brush, this process of taking the cork out of the equation becomes seamless. Eleven Madison Park always seeks to devise new ways, or revive old ones, to "push the envelope" and create an inspiring dining experience. Table side Port tongs are a sure fire way to add that special touch.
